Is it possible to check if an email has been read and unsend it or delete it if possible?

The owner of a company sent an email to a small group but accidently sent it to an employee that should not have received it. He wants me to delete it if and only if she hasn't seen it.

The employee is on vacation with an away message but I know frequently they get notification of incoming emails.

I tried the usage report in Exchange but the available reports only go to the 13th.

Is there a way to confirm if it has been seen?

Add delegation for the mailbox to your account or the owners account and go and delete it. Or create a TAP password for the account with a 1 hour expiration and go check if it's unread and delete it.

Just want to point out the obvious. An email can be read and then marked unread. I know many people that have used that before to keep important stuff at the top.

What plan is being used for Exchange?
 
You can recall emails sent to someone else within the same mail servers orgs. When going through the recall process, there is this (see below) dialog box...the current settings that are there by default are what you seek....
If you sent an email to someone outside of your mail server, there is no recall action possible...since the email hit the public streets once it left your mail server.

Yes - apparently the audit logs in M365 can tell you that this happened with the "MailItemAccessed" event- but that might require an higher license (Purview audit premium). I've never tried. I tell folks that ask that any email sent should be considered delivered and read.
That's why I asked about what license was being used. The lowest 2 plans really seem to leave a lot of stuff out that might be needed. Not to mention if they are using Godaddy they're starting with crippleware at any level.
