If the usb drive is connected but NOT shared or accessible from the network would that not be enough?

No because if it's connected to the NAS the user of the nas have access rights to it, so if the ransomware comes to the NAS it will encrypt everything the the user of the NAS have read/write access to
 
Then it might be wise to get one of those encrypted drives or external drives that have a physical write protect. Backup, then turn on protection, it can't write unless the key is entered on keypad.

Which is then the same amount of effort/intervention as unplugging/plugging in the drive (with the same "doomed to failure" result, IMO), except you're paying extra money for the capability. Seriously, I wish this stuff were easy - it just isn't.
