In the UK, to purchase a discounted student copy all you need is an education email address like ".ac.uk". They don't seem to ask many questions.

You don't even need that. You just tell software4students the name of a school and the name of a pupil as being your family member. Since the order is completed instantly, it's clear they don't check even that info

When I bought office 2007 online, I had to fax a copy of my student ID before the dispatch of the software. I think this was to cover their backs more than anything.
When I purchased office 2010, it was from the campus bookstore and they swiped my student ID to confirm I was a student.
